Cannellini beans take longer to cook than chickpeas but the method has the same steps.

Soak the beans in plenty of cold water overnight. Drain the cannellini beans, then put them in a large saucepan, cover generously with cold water. Bring to the boil, then simmer gently with the pan lid half on for about 75 minutes.

It is important to keep an eye on the water level, adding more if necessary.
