We tend to make these around Christmas time and if you prefer a sharper glaze you could use lemon juice and zest instead.
Makes about 30 cookies (depending on the size of your cookie cutter)
125 g unsalted butter
90 g light brown sugar
1 1/2 tsp mixed spice
1 1/2 tsp ground cinnamon
Good pinch of salt
300 g plain flour
1 tsp baking powder
160 g icing sugar mixture
30 ml orange juice
2 tsp grated orange zest
Pre-heat your oven to 160 C and line two baking trays with paper.
Cream together butter, sugar, spices and salt. Then beat in the egg.
Add the flour and baking powder to the bowl and stir with a wooden spoon until the mixture comes together.
Tip the dough onto a clean bench and lightly knead until a dough forms.
Sprinkle the bench with a little flour and roll the dough out to about 4 mm thick.
Cut out desired cookie shapes and place on the lined cookie tray. The cookies don’t spread much so there isn’t any need to space them to far apart.
Bake for 12 – 15 minutes.
Once the cookies have cooled place them on a wire rack and place the paper from the baking trays underneath the wire rack (the paper will catch any rogue glaze).
Make the glaze by stirring the ingredients together in a small bowl and then drizzle or pipe the glaze onto the biscuits.
